VEGETABLE FRIED RICE





INGREDIENTS:

Basmathi Rice - 1 cup
Water  -  as required
Carrot   - 1/4 cup grated
Capsicum   & Cabbage  -  1/2 cup
Coriander leaves - as required
Oil -3 tbspn
Pepper Powder - 4 tbspn
Salt - 2tbspn
Cashewnuts - 7-8 nos

METHOD

Cut the vegetables finely .Soak basmathi rice for 10 mins and boil them separately with little amount of salt and oil.Keep the boiled rice separately till they reach room temperature.Add oil in a pan fry all the vegetables till the raw smell goes away.
Add some chopped coriander leaves to the rice.Let the fried vegetables come to room temperature then mix it with the boiled rice.
Add pepper powder and salt to the rice and mix well.Garnish it with some fried cashews.Fried rice is ready to serve.
